Some recipes find their way into my weekly menu, and others are chosen by the people I love most. This week’s recipe falls into the second category. My Favorite Critic requested this Jamy Strawberry Galette for his birthday, and I couldn’t think of a better way to celebrate than baking something special.
Fresh summer strawberries are one of my favorite ingredients to bake with, and this galette lets them truly shine. Layered over a buttery homemade crust with a generous spread of berry jam, it feels both rustic and elegant—the kind of dessert that’s beautiful enough for a celebration but simple enough to enjoy on an ordinary weekend. I have a feeling this one is going to earn a permanent place in our recipe collection.

Ingredients
Dough
- 1½ cups all-purpose flour
- ¼ cup roasted shelled pistachios, finely ground (or additional flour)
- ½ teaspoon kosher salt
- 1½ sticks (12 tablespoons) cold salted butter, grated
Filling
- 4 cups strawberries, halved if large
- ¼ cup honey
- 1 tablespoon cornstarch
- 1 tablespoon fresh lemon thyme leaves (optional)
- 1 teaspoon vanilla extract
- ½ cup high-quality raspberry or strawberry jam
- 1 egg, beaten
- Coarse sugar, for sprinkling
Instructions
- In a large bowl, combine the flour, ground pistachios, and salt. Add the grated butter and work it into the flour using your fingertips until the mixture resembles small peas.
- Stir in 3 tablespoons of cold water, adding additional water one tablespoon at a time until the dough just comes together. Knead gently on a lightly floured surface for about one minute. Refrigerate while preparing the filling or for up to one week.
- In a medium bowl, toss together the strawberries, honey, cornstarch, thyme (if using), and vanilla.
- Preheat the oven to 375°F. Line a baking sheet with parchment paper.
- Roll the dough into a rough circle or rectangle about ¼-inch thick. Transfer to the prepared baking sheet.
- Spread the jam over the dough, leaving a 1-inch border. Arrange the strawberries over the jam and spoon any remaining juices over the fruit.
- Fold the edges of the dough over the filling. Brush the crust with beaten egg and sprinkle generously with coarse sugar.
- Chill the assembled galette in the fridge for 15–30 minutes.
- Bake for 45–50 minutes, until the crust is deeply golden and the filling is bubbly.
- Allow to cool slightly before serving. Garnish with fresh thyme if desired and serve with vanilla ice cream.
