Weekend breakfasts are when I tend to have a little more fun in the kitchen. I like trying something different for breakfast or brunch—especially when I know the leftovers can become an easy lunch during the week.

This week, the deciding factor was pretty simple: hash browns. I LOVE them! Layer them with sausage, peppers, eggs, Cheddar, and pepper Jack cheese, and I was immediately curious about how this breakfast version of lasagna would come together.

It’s certainly a heartier breakfast than we make most mornings, but that’s part of the fun of a weekend recipe. I’m looking forward to seeing whether this one tastes just as good reheated for lunch a day or two later.

This is the kind of breakfast that feels hearty and comforting without requiring you to stand at the stove making individual servings. Everything is layered into one baking dish and comes out ready to slice and serve.

I also like that it has plenty going on in each layer—savory sausage, colorful peppers, a little heat from the hot sauce and pepper Jack, and hash brown patties taking the place of traditional lasagna noodles. It sounds perfect for a slow weekend morning, feeding a crowd, or preparing ahead for several meals.


Recipe

Ingredients

  • 1 tablespoon olive oil
  • 1 pound pork sausage
  • ¾ cup finely chopped red bell pepper
  • ¾ cup finely chopped green bell pepper
  • 4 scallions, thinly sliced, dark and light green parts separated
  • 9 large eggs
  • 3 cups half-and-half
  • 2 teaspoons hot sauce
  • 1 teaspoon kosher salt
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • ½ teaspoon black pepper
  • Cooking spray
  • 24 hash brown patties
  • 1 (8-ounce) package shredded extra-sharp Cheddar cheese, divided
  • 1 (7.5-ounce) package sliced pepper Jack cheese, divided

Directions

  1. Preheat oven to 325°F.
  2. Heat the olive oil in a large skillet over medium heat. Add the sausage and cook, breaking it apart, until mostly browned. Add the red and green peppers along with the light green parts of the scallions. Continue cooking until the sausage is cooked through and the vegetables have softened. Set aside to cool slightly.
  3. In a large bowl, whisk together the eggs, half-and-half, hot sauce, salt, onion powder, garlic powder, and black pepper.
  4. Lightly grease a 9×13-inch baking dish.
  5. Arrange 8 hash brown patties across the bottom. Top with 1½ cups of the sausage mixture, 1 cup Cheddar, and 5 slices pepper Jack. Repeat the layers once more, then finish with the remaining hash browns.
  6. Pour the egg mixture evenly over the casserole. Cover with foil and bake for approximately 1 hour and 20 minutes.
  7. Remove the foil and continue baking for about 40 minutes, until the egg mixture is set and the hash browns on top are golden.
  8. Allow the breakfast lasagna to rest for 15 minutes before slicing. Finish with the reserved dark green scallions.

Notes

This is definitely not a quick breakfast—the baking time alone is around two hours—but most of that time is hands-off. That makes it feel more like a weekend recipe to me, especially since I can enjoy it that morning and hopefully have several lunches already taken care of for the coming week.

I’m curious to see how the hash brown layers hold up after refrigeration and reheating. That may be the real test of whether this earns a permanent spot in my recipe box!

Serving Ideas

Since the breakfast lasagna itself is rich and filling, I would keep the rest of the plate simple. Fresh berries or sliced fruit would add something cool and bright alongside it. A lightly dressed green salad could turn a leftover slice into an easy weekday lunch.

For brunch, I think a bowl of fresh fruit and a good cup of coffee would be just about perfect.

Eggs sometimes get overshadowed in a recipe filled with sausage, cheese, and hash browns, but nutritionally, they bring quite a bit to the table.

Eggs provide complete protein, meaning they contain all nine essential amino acids our bodies need to obtain from food. Protein helps support muscle maintenance and repair and can also contribute to a meal that feels satisfying.

The yolks are particularly nutrient-dense. They provide choline, an essential nutrient involved in cell membrane structure, nervous-system function, and the production of acetylcholine, a neurotransmitter important for memory and muscle function. Eggs also provide nutrients such as vitamin B12, selenium, riboflavin, and fat-soluble vitamins.

And this recipe is a good reminder that nourishment doesn’t always have to look like a bowl of greens. Sometimes it looks like gathering around the table on a weekend morning—with a warm slice of breakfast lasagna on your plate.
