Pear Yogurt Parfait

This recipe turned out to be the perfect summer lunch. With our kitchen still under construction, I’ve been gravitating toward simple meals that don’t require much effort, and this one worked out beautifully. It was light, refreshing, satisfying, and exactly what we wanted on a hot afternoon. Best of all, we enjoyed it for two lunches by storing the pear compote and crunchy topping separately until we were ready to assemble.


First Impressions

From the very first bite, I loved the combination of creamy yogurt, warm spiced pears, juicy pomegranate, and the sweet, crunchy topping. Every layer brought a different texture and flavor, making each bite interesting and delicious.


Flavor, Simplicity & Modifications

The flavors were wonderful just as written. The cinnamon, ginger, and cardamom gave the pear compote a cozy warmth without overpowering the fresh fruit, while the toasted pecans, hemp hearts, and sesame seeds added the perfect crunch.

I didn’t make a single change to the recipe—and honestly, I wouldn’t have wanted to. It came together easily, making it an ideal option for busy days or meal prep.


What I Loved

My favorite part was the crunchy topping. It added so much texture and a hint of sweetness that paired perfectly with the creamy Greek yogurt and tender pears. I also appreciated how filling this parfait was despite feeling light and refreshing—a combination that’s especially welcome during our Arizona summers.


What I Would Keep the Same Next Time

Everything! I would absolutely prepare it exactly as written again. I also plan to continue storing the pear compote and crunchy topping separately, which kept everything fresh and crisp for our second lunch.


What I Might Try Differently

The recipe was wonderful as is, but I might experiment with adding a sprinkle of chia seeds or ground flaxseed for an extra boost of fiber and omega-3s. I could also see this being delicious with walnuts in place of the pecans for a slightly different flavor.


Final Thoughts

This is one of those recipes that proves healthy eating doesn’t have to be complicated. It’s simple to prepare, packed with nourishing ingredients, and feels like a little treat in the middle of the day. If you’re looking for a light breakfast or lunch that satisfies without weighing you down, especially during the warmer months, I definitely recommend giving this one a try. It’s a recipe I’ll happily make again.
