30-Minute Creamy Carrot Red Lentil Soup

First Impressions
This one was an immediate win. Warm, comforting, and full of flavor—it came together easily and felt like something that had been simmering all day (even though it hadn’t!). The texture was especially satisfying—creamy without being heavy.
Flavor, Simplicity & Modifications
I ended up adding a few potatoes that needed to be used up, and that turned out to be such a great decision! They blended beautifully into the soup and added a little extra heartiness. Because of that addition, I did need to add a bit more salt—but it was an easy fix and really helped bring everything together. I also didn’t fully blend the soup, leaving some of the carrots and potatoes a little chunky—which gave it such a nice texture.
What I Loved
The balance of spices with the natural sweetness of the carrots was just right. It felt nourishing and cozy without being overly rich. One of those recipes that feels both simple and elevated at the same time.

My Favorite Critic agreed—the flavor was spot on!
However… living here in Phoenix, this time of year brings the heat. Being outside all day, he was definitely leaning toward something a bit more refreshing rather than a warm bowl of soup. Fair point!
What I Would Keep the Same Next Time
- The spice blend—so good and well balanced
- The creamy texture from the lentils and coconut milk
- Adding potatoes again (definitely doing that!)
What I Might Try Differently
- Save this one for slightly cooler days (or crank up the AC 😊)
- Or… experiment with serving it slightly warm instead of hot
- Maybe pair it with something cool and crisp to balance it out
