After traveling to Ireland, I developed a little secret… I absolutely love poutine! Who can resist crispy potatoes, savory gravy, and melted cheese? It’s the ultimate comfort food.

Weekends are my time to have a little more fun in the kitchen (and yes… maybe eat a little less healthy than I do during the week!). So when I came across this breakfast-inspired twist on poutine, I knew it had to make its way onto my menu. Crispy tater tots, fluffy scrambled eggs, homemade country gravy, gooey cheddar cheese, and crispy bacon? Count me in!
