Old School Easy Brown Sugar Peach Cobbler
Recipe by Tieghan Gerard//Half Baked Harvest
There are few things that say summer quite like fresh peaches. Sweet, juicy, and bursting with flavor, they seem to capture sunshine in every bite. As if that wasn’t enough reason to make this recipe, I happened to receive a free bag of peaches with my grocery order this week—clearly a sign that peach cobbler needed to be on the menu!
What immediately caught my attention about this recipe was its simplicity. No complicated techniques, no special equipment, and no fuss. Just a handful of pantry staples, fresh peaches, and a little time in the oven. The addition of maple syrup and maple butter takes this classic dessert to the next level, adding a rich sweetness that pairs beautifully with the peaches.
Whether you’re serving it at a summer gathering or simply enjoying a quiet evening at home, this cobbler promises to be warm, comforting, and full of seasonal flavor.

Recipe
Ingredients
- 1 stick (8 tablespoons) salted butter, cubed
- 1 cup all-purpose flour
- 1 cup light or dark brown sugar, divided
- 2 teaspoons baking powder
- ½ teaspoon cinnamon
- ½ teaspoon kosher salt
- 1 cup milk
- 1 tablespoon vanilla
- 5–6 peaches, cut into 8 wedges each
- 2 tablespoons maple syrup
Maple Butter
- 4 tablespoons salted butter
- ¼ cup maple syrup
Instructions
- Preheat oven to 375°F. Place cubed butter into a 9×13-inch baking dish and place in the oven until melted, about 10 minutes.
- In a mixing bowl, combine flour, ¾ cup brown sugar, baking powder, cinnamon, and salt. Stir in milk and vanilla until just combined.
- In a separate bowl, toss peaches with the remaining ¼ cup brown sugar and maple syrup.
- Layer half of the peaches over the melted butter. Pour the batter evenly over the peaches—do not stir. Top with the remaining peaches.
- Bake for 50–55 minutes, until the center is set and the edges are lightly browned.
- While the cobbler bakes, combine the butter and maple syrup in a small saucepan. Bring to a boil and cook for 2 minutes. Remove from heat.
- Serve the cobbler warm or at room temperature with ice cream and a drizzle of maple butter.
Notes
- Fresh peaches will provide the best flavor, but frozen peaches can work in a pinch.
- Dark brown sugar will create a deeper, richer caramel flavor.
- Be sure not to stir the batter once it’s poured into the baking dish—the magic happens as it bakes!
- The cobbler will continue to set slightly as it cools.
- Leftovers can be stored covered in the refrigerator for several days.
