Ingredients

Cake
• 1 stick unsalted butter, softened (about ½ cup)
• 1 cup granulated sugar
• 2 large eggs
• 1½ teaspoons vanilla
• 1½ cups all-purpose flour
• 1¼ teaspoons baking powder
• ¼ teaspoon salt
• ½ cup sour cream
• 16 ounces strawberries, sliced (about 2 cups)

Topping
• 3 Tablespoons granulated sugar
• 2 Tablespoons powdered sugar (optional, for dusting)


Instructions

  1. Preheat the oven to 350°F.
  2. Line a 9-inch springform pan (or cake pan) with parchment paper.
  3. In a large bowl (or stand mixer), whip together the butter and sugar for 4–5 minutes until pale and fluffy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Mix in the vanilla.
  6. In a separate bowl, sift together flour, baking powder, and salt.
  7. Gradually add the flour mixture and sour cream, alternating between the two, beginning and ending with the flour mixture.
  8. Gently fold in the sliced strawberries.
  9. Pour batter into the pan and smooth the top.
  10. Sprinkle the granulated sugar evenly over the batter.
  11. Bake for 40–45 minutes, until lightly golden and a toothpick comes out clean.
  12. Let cool completely, then remove from the pan.
  13. Dust with powdered sugar (optional), slice, and enjoy.
