What really intrigued me, though, is the addition of cucumber in the omelet. I’ve only ever eaten cucumbers raw and cold, never cooked into something warm like this—so I’m especially curious to see how that flavor and texture come together.

Instructions
- Whisk together eggs, ham, cheese, cucumber, scallions, pepper, and salt in a bowl.
- Heat oil in a small skillet over low. Add egg mixture to skillet. Without stirring, cook over low until set, about 2-3 minutes. Fold over; transfer to serving plate. Serve with salsa if desired.
