This week’s recipe was picked by my husband—my “Favorite Critic”—and he has a soft spot for a really good sandwich. This one definitely looks like it delivers. Warm, cheesy, a little spicy, and packed into garlicky bread… it feels like comfort food with a bold twist. Ingredients
- 2 fresh or frozen garlic baguettes (approx. 200g/7oz each)
- 2 tablespoons oil
- 2 chicken breasts, chopped into small bite-size pieces (about 350g/12.3oz total)
- 1 tablespoon Cajun spice mix
- ½ teaspoon black pepper
- 1 chicken stock cube, crumbled
- 1 onion, peeled and sliced
- 1 red bell pepper, deseeded and sliced
- 1 yellow bell pepper, deseeded and sliced
- 2 cloves garlic, peeled and minced
- 2 jalapeños (or medium-heat green chilies), sliced
- 60 ml (4 tablespoons) hot pepper sauce (such as Frank’s)
- 1 tablespoon Worcestershire sauce
- 1 tablespoon cider vinegar
- 100 ml (⅓ cup + 1 tablespoon) double (heavy) cream
- 50 g (½ packed cup) cheddar cheese, grated
- 3 spring onions (scallions), roughly chopped
Directions
- Preheat the oven to 180°C/350°F (or according to the garlic baguette package instructions).
- If using fresh garlic baguettes, carefully slice halfway through each one lengthways to create space for filling. (If frozen, wait until baked to slice.)
- Place the baguettes on a baking tray and cook according to package directions.
- While the bread bakes, heat oil in a large skillet over medium-high heat.
- Add chopped chicken and sprinkle with Cajun spice and black pepper. Cook for about 5 minutes, stirring occasionally, until lightly seared and nearly cooked through.
- Crumble in the stock cube and stir to combine.
- Add onion, bell peppers, garlic, and half of the sliced jalapeños. Cook for another 5 minutes, stirring often, until softened.
- Stir in hot sauce, Worcestershire sauce, cider vinegar, and cream.
- Bring to a simmer and cook for 4–5 minutes, until the chicken is fully cooked and the sauce slightly thickens. Turn off heat.
- Once the baguettes are baked, carefully open them along the slice.
- Spoon the buffalo chicken mixture evenly into each baguette.
- Sprinkle grated cheddar cheese over the top.
- Return to the oven for 2–3 minutes, until the cheese is melted.
- Remove from oven, slice each baguette in half, and top with remaining jalapeños and chopped spring onions.
- Serve warm and enjoy!

- You can use fresh or frozen garlic baguettes—both work well depending on what you have on hand
- Adjust spice by reducing jalapeños or choosing a milder hot sauce
- If your oven runs hot (like mine!), keep an eye on the final melt so the bread doesn’t over-toast
- Rotisserie chicken could be a great shortcut if you’re short on time
