There is something about summer fruit that makes me want to slow down and bake. I recently mentioned in conversation that I didn’t think I had ever seen a dessert featuring blackberries, and that sent me searching for one! Since I’ve also been enjoying learning to make galettes, this recipe immediately caught my eye.
The combination of juicy peaches and sweet-tart blackberries wrapped in flaky puff pastry feels like summer on a plate. Best of all, using frozen puff pastry makes this recipe approachable enough for a weeknight dessert while still looking beautiful enough to share with family or friends.

Ingredients
- 1 cup fresh blackberries
- 1/4 cup brown sugar
- 1 tablespoon cornstarch
- 2 teaspoons vanilla extract
- 1 sheet frozen puff pastry, thawed
- 1–2 peaches, thinly sliced
- 2 tablespoons honey or pure maple syrup
- 2 tablespoons salted butter
- 1 egg, beaten
- Coarse sugar, for sprinkling
Instructions
- Preheat oven to 375°F.
- In a medium bowl, combine the blackberries, brown sugar, cornstarch, and vanilla.
- On a lightly floured surface, roll the puff pastry into a rectangle about ¼-inch thick. Transfer to a parchment-lined baking sheet.
- Spread the blackberry mixture over the pastry, leaving about a 1-inch border. Arrange the peach slices over the blackberries.
- In a small saucepan, melt together the honey (or maple syrup) and butter. Drizzle over the peaches.
- Fold the edges of the pastry over the fruit, leaving the center exposed. Brush the pastry with beaten egg and sprinkle with coarse sugar.
- Bake for 25–30 minutes, or until the pastry is golden brown and crisp.
- Allow to cool slightly before serving.
Notes
- Ripe but still slightly firm peaches work best so they hold their shape during baking.
- If your peaches are especially sweet, you can reduce the brown sugar slightly.
- Don’t worry if some of the fruit juices bubble out while baking—that rustic look is part of the charm of a galette.
- Puff pastry bakes best when kept cold until it goes into the oven.
