Recipe by Alex Snodgrass // The Defined Dish

I had a feeling I was going to like this recipe—I love quiche! But what I really wanted to know was whether these little individual quiches would be as good later in the week as they were coming out of the oven.

The answer? Yes!

And remember that Caesar dressing I was determined to recreate after our California vacation? I think I accomplished it! It wasn’t quite as good as my sister-in-law’s, but it was a great start. Paired with the quiches and a salad, dinner was a success!

First Impressions

There is just something about puff pastry coming out of the oven all golden and flaky! These looked beautiful and felt a little fancier than the amount of work that went into them.

I also really liked the individual portions. Instead of slicing into one large quiche, everyone gets their own little one—and who doesn’t love that?

Flavor, Simplicity & Modifications

I made the recipe as written, and I’m glad I did. The ham and Gruyère were delicious together, while the Dijon and thyme added just enough extra flavor.

This was one of those recipes where I didn’t find myself thinking, This needs something. Everything worked together just as it was supposed to.

What I Loved

The surprise for me was how much I enjoyed these as leftovers. Sometimes egg dishes just aren’t quite the same reheated, but we happily ate these again during the week.

That makes them a great option for meal prep—or even for preparing ahead if you have a busy week coming up.

What I Would Keep the Same Next Time

The Gruyère! It has such a wonderful flavor and paired perfectly with the ham. I wouldn’t be tempted to swap it for another cheese.

I’d also keep the Dijon and fresh thyme. They may seem like small additions, but I think they are part of what made the filling so good.

What I Might Try Differently

Here is where I’m curious…

What happens if I leave off that beautiful puff pastry?

I know, I know—I just told you how much I loved it! And I did. But I would like to try these as crustless mini quiches for a lighter option and see if I miss the pastry or decide the filling can stand perfectly well on its own.

And the Caesar dressing? That needs another round too. I’m coming for you, sister-in-law!

Final Thoughts

I started the week thinking these looked like a great meal-prep recipe. I ended the week knowing they are.

But I think what I enjoyed most was the whole meal—the warm quiches, the crisp Caesar salad, and getting to recreate a little piece of our California vacation at home.

Sometimes that is what makes cooking fun. A recipe catches your eye, something you tasted on vacation inspires the side dish, and suddenly an ordinary dinner has a story behind it.

Did you cook along with me this week? I’d love to hear how yours turned out and what you might try differently next time!
