Recipe by Tieghan Gerard // Half Baked Harvest
This week’s recipe became much more than dessert—it became part of a birthday celebration with My Favorite Critic. Sharing a homemade treat around the table is one of my favorite ways to celebrate life’s special moments, and this galette made the occasion feel even sweeter. Served warm with vanilla ice cream, it was the perfect ending to a wonderful day together.
First Impressions
This galette was everything I hoped it would be—warm, sweet, rustic, and incredibly satisfying. The fresh strawberries softened beautifully as they baked, while the raspberry jam added another layer of rich berry flavor. Every bite felt like summer.
Flavor, Simplicity & Modifications
The combination of strawberries and raspberry jam was absolutely delicious. My Favorite Critic chose the raspberry jam, and I think it added wonderful depth that complemented the fresh berries perfectly.

I did take one shortcut and used frozen pastry dough instead of making the homemade crust. Sometimes life calls for simple, and this was one of those times. Even with that modification, the galette baked beautifully and tasted wonderful.
What I Loved
I loved how effortlessly this dessert came together and how special it felt despite its rustic appearance. Served warm with a scoop of vanilla ice cream, it was comforting, beautiful, and exactly what I hoped for as we celebrated another birthday together.
What I Would Keep the Same Next Time
Without hesitation, I’d use the raspberry jam again. It was a perfect choice and paired beautifully with the strawberries. And vanilla ice cream? That’s staying too—it completed the dessert.
What I Might Try Differently
Next time I’d love to make the crust exactly as written. The addition of freshly grated butter and ground pistachios sounds absolutely delicious, and I think it would elevate an already wonderful dessert even more.
Final Thoughts
Some recipes become favorites because of their flavor. Others become favorites because of the memories attached to them. This one is both.
I’m grateful for another year to celebrate the man I love and thankful for the simple joy of gathering around the table together. If this galette is any indication, it’s going to be a sweet year ahead.
