Blackberry Peach Galette

Well…my husband and I ate the whole thing.

I think that tells you everything you need to know! This galette was absolutely delicious—light, fresh, and just sweet enough without being overly rich. Served warm with a scoop of vanilla ice cream, it was the perfect summer dessert.
Flavor, Simplicity & Modifications
The combination of juicy peaches and tart blackberries was wonderful. The blackberries added just enough brightness to balance the sweetness of the peaches, and the buttery puff pastry baked into beautiful flaky layers.
One of my favorite things about this recipe was how approachable it was. If you’ve been intimidated by making a galette, this is a wonderful place to start. Using puff pastry removes much of the stress while still creating a dessert that looks impressive. I followed the recipe as written and honestly didn’t feel it needed a thing.
What I Loved
I loved how light this dessert tasted. It wasn’t overly sweet or heavy, allowing the fresh fruit to really shine. The rustic look of a galette also makes it wonderfully forgiving—you don’t have to strive for perfection. Fold it up, bake it, and enjoy!
And of course…sharing the entire thing with my favorite critic wasn’t too bad either.
What I Would Keep the Same Next Time

The combination of peaches, blackberries, honey, butter, and flaky puff pastry worked beautifully together. Serving it warm with vanilla ice cream is definitely non-negotiable in my book.
What I Might Try Differently
Next time I may add a sprinkle of sliced almonds or chopped pecans before baking for a little extra crunch. I also think a tiny pinch of cinnamon or cardamom would complement the fruit beautifully without overpowering it.
Final Thoughts
This recipe is a keeper and one I’ll happily make again throughout peach season. It’s simple enough for a weeknight treat but pretty enough to serve when friends or family come over. If you’re looking for an easy introduction to making galettes, I highly recommend starting here.
