Olive Oil Orange Yogurt Coffee Cake

First Impressions
This was one of those recipes that felt like it would be good before it even went into the oven—and it delivered on that promise in so many ways. The batter came together quickly and easily, which always feels like a small win. Simple, approachable, and filled with the kind of bright citrus aroma that makes your kitchen feel like something special is happening.
Flavor and Modifications
I substituted avocado oil for the olive oil—no real reason other than I already had a bottle open. I did notice right away that it was thinner than olive oil, which made me pause for a moment, but I went ahead with it.
The flavor of the cake itself was absolutely beautiful—light, citrusy, and fresh. Perfect for spring!
And the glaze? That was the standout. It added a wonderful orange, zesty brightness that truly enhanced the entire cake and pulled everything together.
Texture-wise… this is where I’ll own it. I know my oven runs hot. I know I usually need to pull baked goods 5–10 minutes early. But I decided to test that theory and baked it the full 40 minutes.
Result: a bit dry.
My fault—and yes, My Favorite Critic agreed.

• Pull it as soon as a toothpick comes out clean—no “just a few more minutes”
• Possibly add a touch more yogurt if I want to ensure extra moisture
